Lunchbox Magic - Egg Muffins Healthy and Delicious!
I say these are like magic, because once you mix up all the ingredients, they come up in the oven like magic and wham bam... you have 12 healthy snacks!
INGREDIENTS - Makes 12 muffins in tray
- 6 slices of bread - any type will do
- 8 large eggs
- ⅓ cup shredded Cheddar Cheese
- 1 cup diced ham
- 2 shallots sliced thin
- Salt & pepper or any other seasoning you like (I didn’t use any, the ham is enough).
INSTRUCTIONS
- Preheat your oven to 180 degrees celcius.
- Grease your muffin tray or silicone moulds.
- With a pastry or biscuit cutter, cut rounds from bread, just a bit larger than the bottom of your muffin tin bottom. A two inch cutter should do it. Place these into the muffin tray, pressing down lightly.
- In a bowl, whisk your eggs and add in the cheese, ham, shallots and any seasoning you like.
- Fill muffin cups just shy of the rim.
- Bake for 15-20 minutes or until lightly browned.
- Allow to cool slightly in tray before removing and eat! Hopefully not all at once so some can make it into lunchboxes.
